Northern Saskatchewan 2015 - More Fresh Food


 Birch catkins, early spring.  A good salad ingredient.
Young fireweed plants, early spring.  Excellent salad greens.
Inner bark (cambium) of jack pine.
Good sautéed in some shortening.  Can be eaten raw or boiled but better diced and used to supplement a meat dish such as stew.   Tamarack can be used in the same fashion.
Male pine "cones" coated with pollen, early spring.
Can be eaten raw or boiled.  Pollen can be shaken off and eaten as is.
